Slow Cooker “Roast Chicken”

Who doesn’t love roast chicken? Ze French inspired herbs, ze garlic, it is “le best” as we say. But who has time to roast a chicken on the week nights? Not us. We don’t imagine you do either. This has all the flavor of classic roast chicken, but it is oh so easy-peasy. We use our slow cookers all.the.time because you can cook a ton of protein at one time and it doesn’t hold up your life. There’s no waiting around or checking to see if it’s done. Set it and forget it baby. If you’re like me, you’ll make your fiancé/husband put the chicken on when he goes to bed, and it’ll make your whole house smell delicious by the time you’re up at 5am to teach the babies. When I make this recipe, I make 3-4 pounds of chicken at a time and use it as “emergency protein.” I eat it for almost every lunch and when I come home from work, if I can’t cook something new, I know all I have to do is chop up some veggies, take a scoop of this delicious and tender chicken and I’ve got a delightful, nutrient-rich, relaxing meal that took zero time on a week night.

What You’ll Need:

  • 3-4 pounds organic chicken (any cut is fine! I used all breast meat this week)

  • 2 tablespoons of ghee

  • 2 onions, chopped medium

  • 1 teaspoon tomato paste

  • 1/2 cup chicken stock

  • Your favorite “poultry seasoning” (I used Flavor God Garlic Lover’s)

  • Skillet

  • Crock Pot

What I did:

  1. Rough chop onions and garlic

  2. Melt the ghee in a large skillet over medium heat. Sauté the onions and garlic about 6-7 minutes until they soften, then add the tomato paste.

  3. They should be soft and slightly carmelized after 3-5 more minutes. Add some good old salt and pepper.

  4. If you’re using a cast-iron skillet, deglaze the pan with the chicken stock and pour it all in to your slow cooker. If you’re using non-stick, sad for you, you’re missing delicious flavor punches.

  5. Give your chicken a good pat down with the paper towels, season with salt, pepper and your favorite poultry seasoning all over. Don’t be shy. Chicken likes flavor.

  6. Place the chicken on top of your veg, and set your cooker on low for 4-6 hours, depending on how much chicken you’re using.

  7. Let the chicken rest.

  8. Scoop off some of the fat from the sauce with a spoon and then check the flavor of the sauce.

  9. You can keep the sauce and veg as is, or if you’re feeling fancy, pull out your immersion blender/nutribullet/blender, pour the sauce in and give it a whirl. Then, you’ll not only have delicious compliant chicken, but delicious compliant gravy too. Can you say two-fur?
