Game Day Recipe: Turkey Meatballs

We're back with another one of our Super Bowl ready recipes. These are awesome if you need a protein punch with all your other finger-foods. Our families eat these so quickly, we always make a double batch. They're perfect with toothpicks or over cauli-mash or zoodles. We once served them at a party and they were gone within the first hour...#manapproved.

What You’ll Need:
- 2 pounds ground turkey (we don’t mind the extra lean in this recipe since it’s packed with other flavors) 
- 1 container Trader Joes Mirepoix OR 
- 1 yellow onion, diced 
- 1 cup carrot, diced 
- 1 cup celery, diced 
- 2 tablespoons minced cilantro 
- 2 TBSP Fish Sauce (we like Red Boat brand because it’s sugar free) 
- 1-6oz can tomato paste 
- Salt and Pepper 
- 2 tablespoons coconut oil 
What I Did:
- Preheat the oven to 375 F. Place coconut oil in a baking dish, and place in the oven to allow it to melt. 
- Dice all your veggies and cilantro and throw them into a large bowl. 
- Crumble in the ground beef with your hands, add the fish sauce and tomato paste. Season with S&P. 
- Combine ingredients with your hands and shape into meatballs. You should get about 32 meatballs from 2 lbs meat. 
- Remove baking dish from oven, and snuggle the meatballs up in there. Bake for 15 minutes or until the outsides begin to brown. 
- Serve with toothpicks for a party or over zoodles for yourself. 
- These freeze well too so you could make a double batch for later!
