Game Day Recipe: Turkey Meatballs

We're back with another one of our Super Bowl ready recipes. These are awesome if you need a protein punch with all your other finger-foods. Our families eat these so quickly, we always make a double batch. They're perfect with toothpicks or over cauli-mash or zoodles. We once served them at a party and they were gone within the first hour...#manapproved.

What You’ll Need:

  • 2 pounds ground turkey (we don’t mind the extra lean in this recipe since it’s packed with other flavors)

  • 1 container Trader Joes Mirepoix OR

  • 1 yellow onion, diced

  • 1 cup carrot, diced

  • 1 cup celery, diced

  • 2 tablespoons minced cilantro

  • 2 TBSP Fish Sauce (we like Red Boat brand because it’s sugar free)

  • 1-6oz can tomato paste

  • Salt and Pepper

  • 2 tablespoons coconut oil

What I Did:

  1. Preheat the oven to 375 F. Place coconut oil in a baking dish, and place in the oven to allow it to melt.

  2. Dice all your veggies and cilantro and throw them into a large bowl.

  3. Crumble in the ground beef with your hands, add the fish sauce and tomato paste. Season with S&P.

  4. Combine ingredients with your hands and shape into meatballs. You should get about 32 meatballs from 2 lbs meat.

  5. Remove baking dish from oven, and snuggle the meatballs up in there. Bake for 15 minutes or until the outsides begin to brown.

  6. Serve with toothpicks for a party or over zoodles for yourself.

  7. These freeze well too so you could make a double batch for later!
