Game Day Recipe: Turkey Meatballs
We're back with another one of our Super Bowl ready recipes. These are awesome if you need a protein punch with all your other finger-foods. Our families eat these so quickly, we always make a double batch. They're perfect with toothpicks or over cauli-mash or zoodles. We once served them at a party and they were gone within the first hour...#manapproved.
What You’ll Need:
2 pounds ground turkey (we don’t mind the extra lean in this recipe since it’s packed with other flavors)
1 container Trader Joes Mirepoix OR
1 yellow onion, diced
1 cup carrot, diced
1 cup celery, diced
2 tablespoons minced cilantro
2 TBSP Fish Sauce (we like Red Boat brand because it’s sugar free)
1-6oz can tomato paste
Salt and Pepper
2 tablespoons coconut oil
What I Did:
Preheat the oven to 375 F. Place coconut oil in a baking dish, and place in the oven to allow it to melt.
Dice all your veggies and cilantro and throw them into a large bowl.
Crumble in the ground beef with your hands, add the fish sauce and tomato paste. Season with S&P.
Combine ingredients with your hands and shape into meatballs. You should get about 32 meatballs from 2 lbs meat.
Remove baking dish from oven, and snuggle the meatballs up in there. Bake for 15 minutes or until the outsides begin to brown.
Serve with toothpicks for a party or over zoodles for yourself.
These freeze well too so you could make a double batch for later!
