Grilled Cauliflower Steak

We think cauliflower is quite possibly the world’s most versatile vegetable. What can’t it do? We haven’t answered that question yet because the other night we decided we wanted an entirely grilled meal, but the only veggie in the house was cauliflower. Knowing its superhero-like powers, we decided to give it a go. And as per the usual, cauliflower won. Salty, tangy, hefty and charred, this new recipe may take the cake as our favorite cauliflower creation yet!

What You’ll Need:

  • 1 head cauliflower

  • 1/8 cup olive oil

  • Salt and pepper to taste

  • 2 TBSP paprika

  • 1 TBSP chipotle powder

  • 1 lime, zested and juiced

  • 2 cloves garlic, minced

  • ¼ cup cilantro, chopped

  • capers

What We Did:

1. Heat your grill or grill pan to med-high.

2. Remove everything green from the exterior of the cauliflower. Slice it into “steaks.” Do NOT remove the core as this will soften on the grill and is essential in holding the steaks together.

3. Mix the olive oil, lime juice and garlic together and pour over cauliflower.

4. Mix the dry ingredients together and sprinkle generously over one side of the cauliflower.

5. Put that side down on the grill. Grill for 5 minutes. Sprinkle the rest of the spices on the “clean” side and put that side on the grill for an additional 5 minutes.

6. Remove from the grill, top with capers and cilantro!
