Game Day Recipe: Whole30 Mini "7 Layer Dips"

What's a finger-food lover to do while on a Whole30 in the middle of Super Bowl Season? Make these "scoops" and fill them with your favorite Whole30 compliant ingredients. These are crunchy, savory, and creamy and hit all the notes of a perfect appetizer to put out during your Super Bowl Party. They're so good, your friends won't know how healthy they are.

What You’ll Need:

  • 1 lb PRE extra lean ground beef

  • 1 TBSP salt

  • 5 large sweet potatoes (or 7 medium), shredded

  • 1 egg

  • 1 TBSP onion powder

  • 1 TBSP garlic powder

  • 1 TBSP cumin

  • 1 tsp salt and pepper

  • 1 tsp chili powder

  • 4 slices prosciutto or sugar-free bacon

  • 1 package premade guacamole or sliced avocado

What I Did:

  1. Preheat oven to 400 degrees F.

  2. Bake your prosciutto until crispy. Remove from oven and let cool on paper towels

  3. Shred your sweet potatoes using a box grader, food processor or spiralizer. Place shredded sweet potatoes in a bowl, and sprinkle with 1 TBSp salt.

  4. Let rest in the bowl for 20 minutes. Once 20 minutes are up, squeeze out extra moisture from the sweet potatoes using your hands, paper towels or a dish towel. Get out as much moisture as possible.

  5. Crack the egg into the bowl with the sweet potatoes, and mix around.

  6. Using a mini-muffin tin, push the potato shreds down into the tin to make a cup shape. Bake for 20 minutes, or until the bottom of the cups is starting to crisp up. Once they begin to crisp, change the oven to broil. Remove the cups and place on a flat baking tray, upside down. Broil for 2 minutes—watch carefully so they don’t burn! Remove from the oven and let cool.

  7. Combine all remaining spices in a bowl, mix with a fork.

  8. Crumble the PRE ground beef into a non-stick skillet and sprinkle with the spices. As the beef browns, use a wooden spoon to break it up.

  9. When the beef is browned, use a spoon to spoon the ground beef into the cups. Top with guacamole and sprinkle with crumbled prosciutto.
