Lemon and Ghee Seared Scallops

We are two bonafide beach rats, and we absolutely love enjoying fresh seafood in the summer (and really any time we can). When we're looking for a summer flavor, we go for these delicious and decadent lemon and ghee scallops. These take less than 10 minutes to make and are super versatile: toss them on a salad, serve over zoodles, or pair with skirt steak for a weekend surf and turf, fall-ily them by serving over spaghetti squash and arugula. What You’ll Need:
- 1 pound of scallops 
- 3 tablespoons of ghee (clarified butter) 
- 2-3 cloves of garlic chopped small (we love loading it up but go with what you like) 
- ¼ to ½ cup of diced white onion, depending on your taste 
- 1 tsp salt 
- 1 tsp pepper 
- juice from half a large lemon 

What To Do:
- Heat 1 tablespoon of ghee on medium heat. 
- Pat your scallops thoroughly with a paper towel so they’re nice and dry. Then season with salt and pepper. 
- Sear scallops in ghee for 1-2 minutes on each side, getting a nice golden brown crust. 
- Remove scallops from pan and move to a side plate. 
- Add remaining two tablespoons of ghee to pan and reduce heat to medium. 
- Add your diced garlic and onion to the pan until they begin to brown and get fragrant (when your mouth begins to water, you’ll know they’re ready!). 
- Add your lemon juice to the ghee and garlic and stir to combine, about one more minute. 
- Pour sauce on the scallops and enjoy!
