Summer Chicken

In the summer, or when on vacation, or when at home in New Yorkm we grill nearly every night we can. This is a simple marinade using things you likely already have in the kitchen. We came up with it on a whim one night, and ever since, my family asks for the “Summer Chicken” pretty much every Saturday night.
What You’ll Need
- 1lb of chicken (we grill skinless chicken breasts, but you could easily use thighs or skin-on) 
- ¼ cup balsamic vinegar 
- ¼ cup olive oil 
- ½ tsp salt 
- ½ tsp pepper 
- ½ tsp crushed red pepper flakes 
- 1 tbsp dried rosemary leaves 
- 3 garlic cloves minced 
- 1 tbsp Dijon mustard (check your labels!) 
- Juice of one lemon 
What To Do
- Grab a gallon size ziploc bag. Pour all the marinade ingredients in the bag. Close the bag and shake it off, T. Swift-style. 
- Put the chicken in the bag. Seal it up and let it marinate for at least an hour. 
- Just before cooking, remove the chicken from the fridge and let it reach room temperature. 
- Heat your grill to medium high and cook the chicken breasts 4-5 minutes on each side. Note: If they’re thick, you may want to cook them longer or pound them out a little bit. 
- Celebrate your juicy chicken!
