Zoodles with Blistered Tomatoes and Crispy Bacon


Back again with one of our work week favorites! We are firm believers that brown-bagging it does not have to be a depressing experience. For us, this simple yet delicious lunch is one that we go to time and time again. It’s a lighter twist on a Whole30 favorite: zoodles. These Blistered Cherry Tomato and Bacon Zoodles are the perfect balance – smoky tomatoes and crunchy bacon will leave you energized and satiated. Don’t be afraid to mix this one up! Add a bag of spinach if you want to up the veggie content or top with grilled shrimp, chicken or turkey meatballs for extra protein! Eat it for dinner and pack up the leftovers for lunch the next day. What You’ll Need: - 2 zucchinis - 1 pint of cherry tomatoes - 3 to 4 cloves of garlic, minced - 1 small onion, thinly sliced - 6 slices sugar-free bacon (we absolutely love @naked_bacon_ ) or pancetta - 2 T. olive oil - Salt and pepper to taste - ¼ cup basil, rough chop - Pine nuts for garnish What We Did: 1. Spiralize your zucchini. 2. Put your pine nuts in a sauté pan and toast while stirring for about 3 minutes. 3. In a sauté pan, cook up your bacon (read your labels and make sure there is no added sugar to stay Whole30 compliant!) 4. When the bacon is crispy, remove the bacon to cool on a paper towel-lined plate, but reserve the fat in the pan. When it’s cool, crumble it up. 5. Add your olive oil, garlic, and onion and sauté for about five minutes, until the onion is just becoming translucent. 6. Toss in the cherry tomatoes and some salt. Stir well. Cook for about 8 to 10 minutes over medium to medium high heat. 7. As the cherry tomatoes cook, they will begin to pop. You want this to happen. This is delicious and combines with the sweating onions and the bacon fat to create your sauce. 8. Add your zoodles to the blistered cherry tomatoes and toss so that the zoodles are thoroughly combined with your sauce and heat through for about 3 to 4 minutes. 9. Throw in your basil until it begins to wilt. Keep it quick or your zoodles will get soggy. 10. Toss in your toasted pine nuts, crumble that bacon on top, and enjoy!
