Spinach and Bacon Stuffed Chicken


It's date night, ladies and gentleman! We plan on serving this delicious and filling Spinach Stuffed Chicken to the men in our lives. We don't know about you, but our guys love bacon, and this dish provides plenty of it. Serve it up with some smashed potatoes or a cauli mash (which we'll be sharing later today!) and you have a complete meal in minutes. This recipe will leave you with 10 roll ups, which makes it super easy to prepare for a dinner party without breaking a sweat. Your guests will leave satiated and smiling!

What You’ll Need:

- 20 slices of "clean" bacon, (nitrate, sugar free, etc.), Feel free to swap out for prosciutto if whole30 approved bacon isn't easily available - 1/2 cup red onion chopped - 4 large garlic cloves chopped - 2 pound of spinach, chopped - 10 chicken breasts pounded thin, or 10 chicken/turkey cutlets.

- Dried Thyme - Toothpicks What We Did: 1. Preheat your oven to 375 degrees. 2.Take 6 slices of bacon and chop them up into about 1/2 inch pieces and fry them in a med-large skillet until nice and brown. 3.Remove the bacon from the pan and sauté the red onion in the bacon grease for a few minutes. Add in the garlic cloves and onions and sauté until the onion is translucent. Add the spinach and thyme and sprinkle with salt and pepper, simmer just until the spinach is wilted nicely, and remove from heat to cool slightly. Stir in the precooked bacon pieces. 4. If you have whole chicken breasts, you’ll need to butterfly them into two thin slices. If you have cutlets just leave them be. Season both sides with salt and pepper. 5. Spoon some of the spinach mixture into your chicken. Starting at the skinny end of the chicken, roll it up around the filling. 6. Wrap each roll with an additional slice of salty goodness. Sautee for 8 minutes, flipping occasionally to get brown on all sides. 7. Place in a glass baking dish, and bake uncovered for about 8 more minutes. 8. Serve it up and enjoy! You can swap out your spinach for kale, or throw in some rosemary with that thyme. Again, get creative and anything is possible! Enjoy your weekend, Whole30ers!
