Eggs in a Nest


One more easy and versatile twist on eggs in a nest! We love nestling eggs inside a bell pepper slice. Eat one of these guys over a breakfast salad, on top of zoodles, or our personal favorite, as a layer of a juicy burger! Again, these are super quick, easy, and delicious. This makes three servings but feel free to multiply to make as many as you want! One note about our chosen fat: as you can probably tell by now, we absolutely love cooking with ghee, which is loaded with tons of vitamins and essential fatty acids. We've even been known to lick it straight off the spoon. Our favorite brand is OMGheeButter, which is 100% organic and non-GMO. While we've tried other ghees out there, the richness and creaminess that these guys deliver is unmatched, and their commitment to authenticity, honesty, and improvement make us smile. What You’ll Need: - 1 bell pepper - 3 eggs - 2 tablespoons of Ghee - your favorite spice combination (we toss ours in Flavor God everything seasoning) What We Did: 1. Thinly slice your bell pepper horizontally so you get nice rings. 2. Scoop out any seeds or excess membrane. 3. Heat 1 table spoon of your ghee on medium heat. 4. Toss the peppers in the remaining tablespoon of ghee and coat in seasoning. 5. Lay peppers on your sauté pan and gently crack your egg inside. 6. Cover your pan keeping an eye on your eggs, when the tops are solidified, remove from heat and serve! These babies take your average #Whole30 burger and kick it way, way up!
