Blistered Tomato Vinegarette


Try out this recipe for a delicious homemade dressing. We can’t get enough of the fresh

and ripe tomatoes during the summer, but we try to get them any way and time we can. This is a different way to sneak some of those juicy guys into your dinner. We use this sauce as a garnish (read: dipping sauce) for chicken, as pictured, or use it to top salads of all different kinds. It’s delicious over

vegetables or protein.

What You’ll Need:

-½ pound tomatoes, halved

-½ cup extra virgin olive oil

-1 tbsp red wine vinegar

-1 tbsp lemon juice

-1 tbsp Dijon mustard

-1 tbsp chopped herb (use basil for Italian flavor, or cilantro for a more Mexican feel)

-1/3 whole avocado, cubed

-salt and pepper to taste

What I did:

1. Heat a saute pan to medium-high. Toss the tomatoes in 1 tbsp of olive oil. Pour

mixture into pan and stir occasionally, allowing the tomatoes to burst and blister. (6 or 7

minutes)

2. In a food processor/blender/nutribullet, combine the tomatoes with the vinegar, lemon

juice, herbs,salt and pepper, mustard and avocado. Blend. With the machine on (if you

can) drizzle in the remaining olive oil.
