Artichoke Meatloaf
This is an awesome recipe for lunches because you bake it up once and then have a slice (or two) every day. If you’re really fancy and have a special loaf pan, you can bake enough for one mini loaf each day! We love the saltiness of the artichoke hearts with the savory beef. You can add other veggies if you’re not into artichokes, like spinach or mushrooms.
What You’ll Need:
1 lb Ground Beef, Lamb, Bison, etc.
½ Yellow Onion, diced
14 oz. can Artichoke Hearts, chopped
1 Tbsp Olive Oil or fat of choice
1 Egg, beaten
1 tsp Dried Parsley and Dried Basil
½ tsp Ground Mustard Salt and Pepper
What We Did:
1. Preheat oven to 375F.
2. Heat olive oil to medium high in a large saucepan.
3. When oil is hot, add onions and artichokes and saute a few minutes until slightly
translucent.
4. Combine all ingredients, including sauteed onions and artichoke, in a large bowl, and mix
until thoroughly combined.
5. Put mixture into a regular loaf pan, pressing mixture evenly into all corners and
compacting it so it won't be crumbly.
6. Bake in the preheated oven for 35-40 minutes
7. Remove from oven and let rest at least 10 minutes before cutting and serving.
8. Add your favorite veggie sides, top with tomato sauce or enjoy by itself.
